Every spring the trees are tapped and buckets
hung to collect the first sweet drops of
maple sap.
|
Everyday all the buckets must be emptied
and the sap hauled to the sugar house for
evaporation.
|

|
This evaporation process is done in large
flat pans which have a fire constantly roaring
under them. The collecting and boiling down
process is a high labor and energy intensive
process and therefore very expensive.
|
The sap starts out with the same consistency
as water, as the steam is driven off the
sap eventually thickens and becomes syrup.

|
Government approved specialists sample every
batch of our pure maple syrup and certify
that our syrup is 100% pure and free from
adulteration. |
Bottles are visually checked, then given
a code to indicate their batch, best before
date and origin. |
